Rijsel does one thing and it does it so well that people line up around the block on a Tuesday. The rotisserie chicken. Half a bird, crispy skin, perfectly seasoned, served with a pile of frites and a little salad. It costs about fifteen euros and it is the best meal-to-price ratio in the city. That is not an exaggeration.
The restaurant is in a converted gymnasium in De Pijp, which sounds weird until you walk in and see the high ceilings and the open kitchen and the whole bird-on-a-spit situation happening in the back. The vibe is loud, communal, and a little bit chaotic in the best possible way. Long wooden tables, no tablecloths, everyone eating the same thing. It feels like a dinner party where you happen to not know anyone yet.
Here is the critical information: they do not take reservations. None. Zero. You show up, you put your name down, and you wait. On weeknights they open at six and if you are there at five forty-five you will probably get seated in the first wave. On Fridays and Saturdays, arrive by five thirty or be prepared to wait an hour. Bring someone you like talking to because you are going to be standing outside for a bit.
The menu is French-Flemish, which in practice means rotisserie chicken, coq au vin, beef stew, and a few other hearty dishes that taste like someone's grandmother made them with better ingredients. The chicken is the move but the coq au vin is legit too. Starters are simple and good. Desserts are homestyle and satisfying. The wine list is short, affordable, and French-leaning.
The crowd skews local. This is not a tourist restaurant despite being in De Pijp. You will hear a lot of Dutch being spoken and the staff switches between Dutch and English without thinking about it. Service is fast and efficient because they have to turn tables.
Downside: it is loud. Really loud. If you want a quiet romantic dinner, go somewhere else. If you want to feel like you are at the best dinner party in Amsterdam where the chicken is roasted to perfection and the wine is flowing and everyone is having a good time, this is it.

Budget-wise, plan for twenty-five to thirty-five euros per person with wine. For this quality of food in Amsterdam, that is a steal.
